Maltitol is a sugar alcohol that has 75-90% of the sweetness of sucrose and other proper ties are similar to sucrose, but its caloric value is half of sucrose, it is less likely to cause dental decay and has less effect on blood sugar and blood lipids. It is often used as a substitute for sugar and substitute for sucrose. Using maltitol to replace sucrose, could produce a variety of sugar-free, low-calorie diabetic foods.
